Ein Getreide ist eine Pflanze, die hauptsächlich wegen ihrer Samen angebaut wird, die in der menschlichen und tierischen Ernährung verwendet werden, oft gemahlen zu raffiniertem oder mehr oder weniger vollständigem Mehl1 , aber auch als ganze Körner (diese Pflanzen werden manchmal auch von pflanzenfressenden Tieren als Futtermittel verzehrt). Der Begriff 'Getreide' bezieht sich auch speziell auf die Körner dieser Pflanzen. Die wichtigsten Getreidearten sind Mais, Weizen, Reis, Hirse (einschließlich Sorghum), Gerste und Hafer (in der Reihenfolge der weltweit produzierten Tonnage).2 Zu Beginn des 21. Jahrhunderts liefert Getreide einen großen Teil (45 %) der Nahrungskalorien der Menschheit.In der Agrar- und Lebensmittelwissenschaft wird der Begriff Getreide hauptsächlich für Pflanzen aus der Familie der Poaceae (oder Gräser) verwendet, wie Roggen, Dinkel und Einkorn, aber auch für andere botanische Familien, die zu den Zweikeimblättrigen gehören, wie Buchweizen (Polygonaceae), Quinoa und Amaranth (Amaranthaceae) und manchmal Sesam (Pedaliaceae) und Chia (Lamiaceae), obwohl die beiden letzteren sehr ölhaltig sind. Strohgetreide wird auch als Getreide bezeichnet, das neben den Körnern auch einen Halm aufweisen kann.
