A análise do mel tem sido orientada para a autenticidade, diluição por melaço de açúcar, alegações de saúde, e recentemente para o controlo ambiental. Devido aos progressos na instrumentação analítica (por exemplo, ICP-MS), muitos laboratórios de análise de vestígios emitiram dados sobre a composição do mel. No entanto, a composição do mel é influenciada por vários factores, pelo que este documento se centra nas limitações das conclusões sobre as indicações de contaminações ambientais. Para além de alguns tri-sacáridos especiais e ácidos orgânicos, a principal diferença entre o mel e as amostras comuns de açúcar é o teor de boro. O conteúdo de oligoelementos depende da composição floral, das entradas do processamento do mel, bem como da deposição atmosférica e da composição do solo. Por conseguinte, a monitorização ambiental deve ser centrada nos méis monoflorais. Uma vez que o mel de madeira contém oligoelementos a níveis consideravelmente superiores (excepto B e Ca), as classificações de, por exemplo, Cd e Pb a partir de dados de peso húmido conduzem a resultados errados, devendo, em vez disso, ser tomados dados baseados em cinzas. Devido à estratégia de amostragem das abelhas, a área em redor da colmeia não é monitorizada de forma homogénea, mas são preferidas as manchas florais.
