Le piante oleaginose sono estremamente importanti per l’uomo. Sono interessanti per l’alimentazione locale e offrono possibilità di trasformazione in prodotti necessari per la vita moderna. L’olio di soia è stato a lungo il grasso vegetale più importante al mondo.La Pentaclethra macrophylla benth è una pianta oleifera proveniente dalle foreste della Repubblica Democratica del Congo, di cui la FAO raccomanda l’uso. I suoi semi, consumati da alcune tribù della RD Congo, sono ricchi di lipidi e proteine di origine vegetale e producono oli che soddisfano i criteri di buona qualità nutrizionale. Contengono anche elementi minerali necessari per il corretto funzionamento dell’organismo. Gli oli pressati sono più resistenti all’ossidazione causata dall’aria rispetto a quelli ottenuti per estrazione con solventi, grazie ai composti minori contenuti nella loro parte insaponificabile. Contengono acidi grassi insaturi come l’acido oleico, linoleico e linolenico, che dovrebbero essere inclusi nella dieta in quanto essenziali per il corretto funzionamento metabolico dell’organismo.
