Curcumin ist eine leuchtend gelbe Chemikalie, die von der Pflanze Curcuma longa produziert wird. Chemisch gesehen ist Curcumin ein Diarylheptanoid, das zur Gruppe der Curcuminoide gehört, welche natürliche Phenole sind, die für die gelbe Farbe von Kurkuma verantwortlich sind. Es ist eine tautomere Verbindung, die in organischen Lösungsmitteln in enolischer Form und in Wasser in Ketoform vorliegt Kurkuma ist ein Gewürz, das sowohl in der medizinisch-wissenschaftlichen als auch in der kulinarischen Welt auf großes Interesse gestoßen ist. Kurkuma ist eine rhizomatöse, krautige, mehrjährige Pflanze (Curcuma longa) aus der Familie der Ingwergewächse.
