Biofilm jest powszechnym sposobem wzrostu bakterii na organicznych lub nieorganicznych powierzchniach w kontakcie z cieczą i okazuje się, że jest to proces dynamiczny, a różne mechanizmy są zaangażowane w adhezję i wzrost bakterii na materiałach syntetycznych. W celu określenia kinetyki adhezji bakterii w biofilmach, przeprowadzono badania biofilmów mleczarskich i termoodpornego biofilmu B.cereus w obiegach pilotowych o przepływie ciągłym wykonanych z silikonu i stali nierdzewnej. Obserwacje metodą ESEM wykazały zwartą strukturę biofilmów po 9 godzinach kontaktu na podłożach z procentem zajęcia 90% powierzchni, wykazującą zmienność cech fizykochemicznych: ydrofobowości i napięć powierzchniowych. W celu optymalizacji metody inhibicji biofilmu, opracowano bio-powłokę ze szczepu Lc. lactis, która chroni powierzchnię poprzez pojawiające się zjawisko 'powlekania' minimalizujące adhezję bakterii i w konsekwencji tworzenie biofilmu. Ocena wpływu bio-pokrycia podpór wykazała spadek wskaźnika przylegania komórek do 80%.
