La chimioprévention consiste à utiliser des produits chimiques présents dans les aliments et/ou des produits chimiques fabriqués en laboratoire pour arrêter, ralentir, inverser ou retarder le processus de formation du cancer. Il s’agit d’une méthode relativement nouvelle et prometteuse de prévention du cancer. On pense que ces produits chimiques alimentaires naturels ont des propriétés chimio-préventives, notamment une activité anti-oxydante et anti-inflammatoire, l’activation des enzymes de phase II, l’apoptose et l’arrêt du cycle cellulaire. Les effets anti-cancérigènes des composés alimentaires naturels ont été expliqués par une variété de mécanismes, mais des recherches récentes se sont concentrées sur les cascades de signalisation intracellulaire comme cibles moléculaires communes pour divers produits chimiques alimentaires naturels chimio-préventifs.
