La birra può essere considerata una bevanda a basso contenuto alcolico, prodotta per fermentazione, i cui ingredienti principali sono acqua, luppolo e cereali maltati. Il suo processo di produzione prevede una serie di fasi, una delle quali è l’ammostatura. La sansa è un rifiuto agroindustriale che, se smaltito in modo inappropriato nell’ambiente, causa una serie di problemi ambientali. Lo scopo di questo studio è stato quello di effettuare un’analisi fisico-chimica di questo residuo ottenuto dalla produzione di birra artigianale di frumento, al fine di sfruttarlo e utilizzarlo in prodotti alimentari. I campioni ottenuti sono stati caratterizzati utilizzando i seguenti parametri: contenuto di umidità, ceneri, lipidi, proteine e carboidrati. I risultati delle analisi per la materia prima appena macinata sono stati: umidità (8,36%), ceneri (1,431%), lipidi (15,60%), proteine (8,29%), carboidrati (66,93%). E per la bagassa: umidità (65,98%); ceneri (0,6185%); lipidi (14,99%); proteine (4,25%) e carboidrati (13,55%). Questi risultati dimostrano che questo residuo ha un alto valore energetico e un grande potenziale di utilizzo in vari settori della tecnologia, come l’alimentazione umana e animale.
