Il presente lavoro ha inteso valutare l’influenza delle variabili del processo di disidratazione osmotica, utilizzando diverse temperature (40, 50 e 60 °C) e diverse concentrazioni di saccarosio nelle soluzioni (40, 50 e 60 °Brix) e l’essiccazione convettiva di fette di kiwi cv. Hayward (40, 50 e 60 °C) sulle caratteristiche chimiche, fisiche e fisico-chimiche del prodotto finale, oltre a valutare l’idoneità di modelli matematici empirici e diffusivi per la descrizione del processo di essiccazione utilizzando una geometria di parete infinita e condizioni al contorno di primo e terzo tipo. I modelli matematici di Lewis, Wang e Singh, Henderson e Pabis, Page, Peleg e Silva et alii, sono stati adattati ai dati sperimentali ottenuti utilizzando il software di curve fitting LAB Fit. Per la soluzione analitica dell’equazione di diffusione sono stati utilizzati i software 'Prescribed Adsorption-Desorption 2.2' e 'Convective Adsorption-Desorption 2.5', che utilizzano le condizioni al contorno del primo e del terzo tipo, consentendo di determinare il numero di Biot, la diffusività efficace e il coefficiente di trasferimento di massa convettivo.
