Este trabalho contribui para o estudo da degradação do óleo de palma artesanal durante a sua comercialização no mercado. No presente trabalho, procurámos estudar a variação de alguns parâmetros físico-químicos do óleo de palma artesanal durante a sua comercialização no mercado, de modo a avaliar a variação da sua qualidade ao longo do tempo. Os resultados mostram que os valores de densidade, teor de água, índice de acidez e peróxido aumentam com o tempo durante a comercialização do óleo de palma no mercado. Pelo contrário, os índices de saponificação, de ésteres e de iodo diminuem. Os resultados obtidos permitem-nos afirmar que a conservação mais ou menos prolongada do óleo de palma pode levar a uma perda mais grave da sua qualidade. Tendo em conta os valores encontrados experimentalmente, o óleo de palma artesanal vendido no mercado central de Bujumbura não deve ser conservado durante mais ou menos 40 dias no mesmo local.
