La production de déchets alimentaires augmente avec la demande de nourriture, c’est-à-dire qu’elle est liée à l’ensemble de la chaîne de production alimentaire. Cela signifie que de nouvelles techniques doivent être développées pour assurer une gestion et un traitement adéquats de ces déchets. La technologie de digestion anaérobie est donc un outil fondamental pour la gestion des déchets alimentaires au Brésil, car elle permet de traiter environ 50 % des déchets qui seraient autrement destinés à la mise en décharge et/ou à l’élimination dans des décharges à ciel ouvert. Elle contribue également à réduire les émissions de gaz à effet de serre (GES) dans l’atmosphère tout en produisant une énergie propre et renouvelable. Le biogaz, gaz énergétique issu du processus de digestion anaérobie, est très polyvalent et peut être utilisé pour produire de la chaleur, de la force motrice et de l’électricité.
