Die Monographie analysiert und systematisiert moderne Informationsdaten zur Verwendung von pflanzlichen Rohstoffen bei der Herstellung von Backwaren. Die technologische und wirtschaftliche Effizienz der Verwendung von Rohstoffen aus Wildfrüchten und Produkten der Ölsaatenverarbeitung wird dargelegt. Die chemische Zusammensetzung und die Möglichkeit der Verwendung von Produkten aus der Verarbeitung von Hagebuttenfrüchten, Ölsaaten, Flachs und Erdnüssen bei der Herstellung von nationalen Backwaren wurde untersucht. Es wurden technologische Lösungen für die Herstellung von Hagebuttenfruchtpulver, Leinsamenmehl und Erdnussmasse aus halbraffiniertem, kaltgepresstem Leinsamenöl entwickelt. Es wurde festgestellt, dass in Bezug auf den Inhalt. In 100 g des Produkts der Hauptnährstoffe ist der Spitzenreiter ML (17 Punkte), gefolgt von MA (28 Punkte) und PS (29 Punkte), die Liste wird vervollständigt durch Weizenmehl der ersten Klasse (36 Punkte). Die Monographie wird Forschern, Fachleuten der Öl- und Fettindustrie und der Lebensmittelindustrie, Lehrern, Doktoranden und Masterstudenten höherer Bildungseinrichtungen empfohlen.
