A produção de leite vem aumentando no estado de Alagoas, bem como no Brasil, no entanto, a sua qualidade ainda é um problema. A baixa qualidade do leite cru refrigerado diminui a vida útil do leite pasteurizado. O aumento da vida útil do leite pasteurizado está diretamente relacionado à redução da contagens de microrganismos deteriorantes no leite cru refrigerado. Não se conseguem muitos dados no Brasil sobre a microbiota contaminante fúngica presentes no leite, dificultando o seu controle. Objetivou-se caracterizar a microbiota fúngica do leite cru refrigerado provenientes dos tanques de expansão do estado de Alagoas, Brasil.
