O objetivo deste livro é caraterizar o colostro, comparar a composição do leite e do colostro, caraterizar as substâncias biologicamente activas do colostro e descrever os seus efeitos na saúde. O colostro é produzido 3 a 7 dias após o parto. O colostro tem uma cor mais amarela, um aroma específico, é mais denso e mais salgado. Em comparação com o leite, o colostro tem um teor mais elevado de proteínas, especialmente imunoglobulinas, gordura, lactoferrina e alguns ácidos orgânicos, vitaminas e minerais. No colostro, o teor de lactose é menor. No colostro encontram-se estas importantes substâncias biologicamente activas, por exemplo, imunoglobulinas, lactoferrina, lisozima, lactoperoxidase (efeito antimicrobiano), β-Lg (efeito antimicrobiano, antioxidante, anticancerígeno), lactoferrina (efeito anticancerígeno), glicomacropeptídeo (efeito atimicrobiano, anti-hipertensivo e antitrombótico). O colostro é recomendado em doenças auto-imunes, virais, cardiovasculares e cancerígenas, diabetes, etc.
