A Rosmarinus officinalis L é uma planta medicinal aromática que representa uma fonte de metabolitos secundários biologicamente activos, tais como óleos essenciais e flavonóides. A identificação da espécie foi efectuada com base em características morfológicas externas que se verificou serem idênticas às descritas na nova flora da Argélia e nas regiões desérticas do sul. Os óleos essenciais de Rosmarinus officinalis.L foram extraídos por hidrodistilação, que foi combinada com a extracção líquido-líquido com éter de petróleo para se obter um melhor rendimento. A extracção sólido-líquido de flavonóides e mais precisamente de catequinas deu um melhor resultado com o extractor de soxhlet em comparação com a maceração; a análise TLC, UV-Vis e IR do extracto utilizando catequina pura como controlo permitiu-nos confirmar a presença de catequinas no nosso extracto. O estudo da actividade antioxidante das catequinas extraídas, de acordo com o método electroquímico, mostrou que têm uma importante actividade antioxidante confirmada por um teste de limpeza com radicais livres de DPPH.
